Attempting to articulate what’s the momentary difference between writing and talking

When writing, thoughts bouncing one end to another in the mind form a queue, and they escape one character out into the physical word. I begin to notice spelling mistakes, style that sometimes isn't out yet, a sense of thought congestion, briefly an absence of everything, sometimes words that needed to be sent back into the mind.

When talking, the key difference is they escape one word at a time, there is a much better structure to sentences and thoughts, and I do not have a noticeable recall memory of the past, and the future that's about to occur.
